Cream Truffles
* 1 tbsp brandy or liqueur (optional)
* 1 teaspoon vanilla essence
* 1/2 cup cream
* 200g dark chocolate
* 150g grams melted dark chocolate or cocoa

Combine the chocolate and cream in a bowl. Place over a saucepan of very hot but not boiling water until the chocolate melts. Stir occasionally. Alternatively, microwave on medium for 2 - 4 minutes, stirring after each minute. Stir in the brandy or liqueur, then chill until the mixture is beginning to set. Shape into small balls and chill until firm. Roll the truffles in cocoa or dip into the extra melted chocolate and place on a tray lined with waxed paper. Chill until the chocolate sets. Store in a covered container in the refrigerator.
